The head cheese by itself is already wonderful. Add some eggs to get a whole new delicious.
INGREDIENTS
This is what you need for 2 servings:
2-4 eggs
1-2 slices of headcheese

It doesn't just taste good. It looks good too.

Heat 1 tbsp. butter or cooking oil.
Add head cheese. (Pic6)
The gelatin will melt quickly. (Pic7)
Optional: Reduce the liquid as much as you like. I left plenty of liquid. Cooking it dry and stir-frying the headcheese meat will intensify the flavor.
Add the lightly beaten eggs. I did not add any seasoning. The headcheese already has plenty.
