frikandel sausages

I've never made these myself, but I thought this was interesting enough to include FYI.

The correct name is frikandel, with N.
Frikadel (without N) or frikadeller is a meatball popular in many Northern-European countries.

This Dutch sausage is boiled without casing in food-grade tubing.

INGREDIENTS

This is what you need for 6 sausages:

  • 18 oz. finely ground beef
  • 9 oz. ground chicken
  • 2 eggs
  • 5 tbsp. soy sauce
  • 2 tbsp. salt
  • ½ cup breadcrumbs
  • 2 large onions
  • 3 tsp. ground black pepper
  • 2 tsp. ground cumin
  • 2 tsp. yellow mustard powder
  • 1 tsp. ground cilantro
  • ½ tsp. ground cloves
  • ½ tsp. cayenne pepper
  • ¼ tsp. ground nutmeg
