4-meat meatloaf, stewed leeks, mashed potatoes

More Covid-quarantine experimentation. Before, I rarely prepared a meatloaf. Since, I have several times, and I found myself savoring it as breakfast meat. I often made small batches from leftover meat mixes of stuffed cucumbers, but occasionally I tried other recipes.

Beef, pork, bison, turkey. Total at least 6 lbs. yet only 2 1/2 loaves.
This is quite densely packed. You won't need very much for a serving.

Cooking in a water bath = 'au bain marie' keeps the loaf moist, preferably for serving warm as a meal. The liquid gets mostly re-absorbed when refrigerating. 

INGREDIENTS

This is what you need for 20+ servings:

  • 1 lb. each of ground turkey, pork, beef, bison
  • nacho jalapenos
  • 1 lb. bell peppers and onions mix
  • 1 lb. button mushrooms, sliced
  • 2-3 eggs
  • 2 cups breadcrumbs
  • S&P, seasoning
