bacon-wrapped sausage-stuffed duck

This was the last duck in my freezer.
Duck-less times ahead until the holiday season when they'll be back in the stores.

Marielos didn't feel like eating duck that day, so it was me by my lonely self. I only ate one side of the breast and had plenty of leftovers. I didn't even get to the sausages.

The sausages can be used raw, in which case they will fill the body-cavity with a meat-juice and fat mixture that keeps the duck moist from the inside out and shares some of its flavor with the duck.

An alternative method is to pan-fry the sliced sausages beforehand, (with some apples?) which means even more sausage flavor.

INGREDIENTS

This is what you need for 4+ servings:

  • 1 Pekin duck, 4-5 lbs.
  • 3-4 sausages of your choice
  • 1 lb. bacon slices
  • S&P
  • spice rub of your choice
    (pepper, paprika, curry, berbere, Badia complete, olive oil)
