bison chuck tender roast

This came in the same shipment as the bison tongues. Very dark red meat, very lean. It was indeed very tender, cooked over low heat. In the end, I could not taste any difference with beef, but I never seem able to tell the difference except for the tongues and tails.
The price was certainly reasonable enough for such a nice roast, so not complaining.

INGREDIENTS

This is what you need for 4 servings:

chuck tender roast, 2-3 lbs.
S&P, seasoning
olive oil or butter

Directions

Thaw the meat in the refrigerator before cooking.
Heat 2 tbsp. butter or oil.
Sear the meat on all sides.
Reduce heat, cover and simmer over low heat fro 10-20 minutes, depending on the size.
10 minutes for rare as shown below, 15 for medium-rare.
Remove from the heat. Rest for 5 minutes.

Carve the roast against the grain.
In these long muscles, it is easy to see in which direction the muscle fibers run.
I served this with applesauce from a jar, didn't feel like cooking more.

A few minutes longer already turned it to medium-rare.
Careful! It goes very quickly for small roasts.
I served this with tostitos queso blanco sauce and applesauce.
