beef tongue in tomato sauce

I had a very late start in the vegetable garden this year and am only now beginning to see some tomatoes. I have to harvest them green because those pest grackle birds peck at them as soon as they start showing color.

These monster varieties are not really very good as slicing tomatoes. They are so twisted up on themselves around the stem that a slice throughout always has a big hole in the center from the core. It is just easier to roast them whole or stew them into soups and sauces.

OK, they were roasted instead of fried.

Did you know, the central core of these green tomatoes taste like artichoke hearts? That was quite a surprise for us. And because this 'monster' tomato variety had very little juice, we got to enjoy it that much more.

I pressure-cooked this beef tongue a few days ago.
All I had to do today was prepare the tomato sauce and boil the potatoes.

This is what you need for 2 servings:

  • 1 lb. sliced beef tongue, reheated
  • boiled potatoes
  • 2-4 lbs. red tomatoes
  • roasted green tomatoes as above
  • S&P
