beef tongue with mushroom zucchini Alfredo sauce

I already had the beef tongue pressure-cooked a few days ago. I only needed to prepare the sauce and fries.

A. Alfredo sauce with mushrooms & zucchinis

This is a very nice sauce, if I may say so myself. With equal amounts of mushrooms and zucchinis, the mushroom flavor dominates. If you want to give the zucchinis more prominence, double their amount.

This sauce is very easy to prepare: stew mushrooms and zucchinis together, add Alfredo sauce.
I used a jar of store-bought Alfredo. Feel free to make it from scratch.

INGREDIENTS

This is what you need for 4 servings:

  • 1 lb. white button mushrooms
  • 1 lb. zucchinis
  • 2-3 cups Alfredo sauce
  • S&P, spices of your choice

b. jicama fries

A delicious little snack that can also be served as a side dish with a meal.

If you fry them until they are dark brown instead of mottled as shown, they will be sweeter.

INGREDIENTS

This is what you need for 2 servings:

  • 1 medium jicama

I had cooked the beef tongue a few days earlier and refrigerated it as a chunk. It is amazing how much easier it is to slice thinly and evenly when cold. If I tried this while hot, I would just have torn it up.

INGREDIENTS

This is what you need for 2-4 servings:

  • 1-2 lbs. beef tongue, cooked, refrigerated
  • sauce as above
  • jicama fries as above
