beef stew with mushrooms, bell peppers, tomatoes


This is one of the meals I cooked while we were visiting Disneyworld in Orlando Florida. I thought the Mickey theme of the stove was quite appropriate to the situation. :-)

This is a simple chuck steak stew with very few vegetables, no less delicious because of that limitation. It could be considered as a Mexican-inspired beef stew, bistec with a few extra ingredients.


This is what you need for 2 servings:

  • 1 lb. beef chuck steak, thin-cut
  • 1 lb. grape tomatoes
  • 1/2 lb. white button mushrooms, sliced
  • 1/2 medium yellow onion
  • olive oil
  • S&P
