beef Bourguignon variation


A variation on Beef Bourguignon with berbere and mango juice.
Berbere is mostly powdered red chile, with a few extra spices added.
Mango juice adds an acidic sweet flavor.


This is what you need for 6-8 servings:

  • 2 lbs. chuck beef, cut small
  • 1 lb. carrots, sliced
  • 1 lb. mushrooms
  • 1 cup pearl onions
  • 1 lb. potatoes, diced
  • 2 cups mango juice
  • 2 cups red wine
  • S&P, berbere spice to taste
