chile colorado with beer, cider

Chile colorado = Sp. red chile. This is a typically Mexican recipe.

Yet, except for the added red chile, this recipe is identical to the Flemish beef stew known as carbonnades with beer and hard cider instead of prunes. This changes the consistency of the sauce, making it smoother and a bit thinner.  

INGREDIENTS

This is what you need for 6-8 servings:

  • 2 lbs beef chuck roast, cut small
  • dark beer and/or hard apple cider
    OR beef / chicken bouillon
  • onions (optional)
  • S&P

red chile sauce:

  • 1-2 cups red chiles, frozen
  • garlic, ground cumin, oregano, allspice
  • 3 tsp maizena (aka Masa Harina)
