beef stew with carrots & potatoes

This recipe takes the Beef Stew recipe just one step further by adding a few vegetables to the stew pot.  This is a simple but delicious meal. It doesn't need anything else besides these few ingredients.

Do not add the vegetables at the beginning. They will be way overcooked.


This is what you need for 6-8 servings:

  • 2 lb. beef chuck, cubed
  • ½ onion, chopped
  • olive oil
  • 4 large carrots, sliced
  • 4 potatoes, diced
  • S&P
