1-skillet berbere beef stew

Berbere is an Eritrean / Ethiopian spice blend that is somewhat similar to some chili mixes available here in New Mexico, but also contains local spices that are virtually unknown here: e.g. nigella, ajwain, korarima. US blends are usually approximations made with more readily available spices.

This recipe is very similar to a Mexican carne picada, which is mostly sliced beef and tomatoes. I used more onion here and berbere does give it a distinctly different flavor. 

The tomatoes make this one very different from my other beef stew recipes.

INGREDIENTS

This is what you need for 6-8 servings:

  • 1 large onion, chopped
  • 1 cup colored bell pepper mix
  • 1 poblano pepper
  • 2 lbs. chuck steak, sliced, cubed small
  • 6-8 plum tomatoes
  • 4 potatoes
  • S&P, berbere
