rump roast, cauliflower, poblano pepper

This was a very nice 2.5"-thick bottom round roast that looked like an over-sized London Broil. It lasted us for several days, first for this day's dinner, the remainder for sandwich meat = roast beef.  The cauliflower was big enough to last us 2 days as well.

INGREDIENTS

This is what you need for 6+ servings:

  • 2+ lbs. bottom round roast
  • 2-3 cups sliced potatoes
  • 2 poblano peppers
  • 1 large onion, peeled, halved
  • 1 cauliflower
  • nacho cheese
  • S&P, seasoning

I was also making onion soup while cooking this meal. The meal was so generously served that our dog didn't eat all the leftovers. Because she doesn't eat onions, the roasted onions ended up in the onion soup.
