stovetop roast beef for sandwich meat

2017-09-13 a.o.

I like roast beef for sandwiches, but I don't care at all for that pre-packaged chemical cocktail in grocery stores that they call roast beef. I prefer to make it myself. I can do better than that. It's easy, quick and delicious.

Marielos doesn't care for red meat, so this one is all mine.

Since I don't need very much, I use a 2-quart saucepan for a small 1 to 1 ½ lb. top round roast. This is my favorite way of cooking roast beef for sandwich meat. It goes a lot faster than oven-baking and I get it reasonably right every time. Well, almost every time. There was that one time I was called away ...

INGREDIENTS

This is what you need for 4-6 servings:

  • 1 – 1.5 lb. top round beef roast
  • olive oil

another day, another roast

I make this several times a year and don't always take pictures. Here's another one.
This one looks more like a sirloin tip roast, flat and wide, with the typical tendon sheet at the bottom.
