brisket in tomato sauce


It's easy enough but it does take a while. A crockpot would also work for this. The acidity of the tomatoes helps to tenderize the meat.


This is what you need for 4-6 servings:

  • 2 lb. chuck roast or brisket
  • 8 Cambray onions
  • 4 carrots, sliced
  • ½ cauliflower, in florets
  • 2 celery stalks, cut small
  • 1 qt. tomato sauce
    preferably freshly made
  • 4 potatoes, peeled, quartered
  • S&P
  • bay leaf
  • a few mint branches
