bistec with chile verde


This is very similar to the carne con papas recipe, but with something extra: green chile. Just one or two chiles are enough to give the dish a new flavor. I cooked the potatoes separately to limit the stewing time.


This is what you need for 2-3 servings:

  •  1 lb. chuck steak, thin-cut
  • 2 large beefsteak tomatoes
    or 4 roma tomatoes
  • 3-4 medium potatoes
  • 1-2 long green chiles, preferably from NM
  • 1 jalapeno pepper
