mixed vegetable soup


It's quite a long ingredient list. That is only because I happened to have all these things in the refrigerator. I often a bit of everything in the pot, always seems to work out very well. I still had some already-sautéed leeks, I added those instead of chopping up a new leek.


This is what you need for 4 quarts = 8+ servings:

  • 1 large onion
  • 1 large carrot
  • 1 ft. leek white
  • 2 celery stalks
  • 1 jalapeño pepper
  • 1 cup sweet peppers, chopped
  • 4 radishes for garnish
  • 1 yellow, 1 green zucchini
  • S&P

optional for meat-lovers:

  • 1 chicken leg, or a small pork or beef roast.

Serving suggestion:

(*) The red pepper in Pic6 is a ripe jalapeño. They are a bit sweeter than green ones.
