Adding a mild melting cheese to soup can have an effect very similar to stirring in heavy cream. After all, cheese is made of milk cream. It can turn the soup milky-white opaque and will add a flavor that is typical for each cheese variety.

Not all cheeses are suitable for this though. Some will separate into oil and a yucky big rubber ball. This happens most often when heated too quickly. Stirring while melting the cheese in small quantities can help to avoid that.

This was made with leftovers of my 2019-10-28 chicken vegetable soup.

INGREDIENTS

This is what you need for 2 quarts servings:

  • 2 quarts vegetable soup
  • 1-2 cups melting cheese, diced or grated

Pic4: add cheese to the soup
