turkey soup with tomatoes

This is one of the few soup recipes where I used only one vegetable. It is a simple recipe and a good way to turn those turkey leftovers into something quite delicious. Cook the bones for a few hours and the soup will gel when refrigerated.

INGREDIENTS

This is what you need for 5 quarts:

  • turkey leftovers
  • 6-8 plum tomatoes, washed, cored
    I don't usually bother with peeling tomatoes for soup
