tomato soup with shrimp, straw mushrooms


This is a simple soup that you can prepare quickly for a small meal. The frozen shrimp are widely available in grocery stores. I can get the straw mushrooms in metal cans only here in the NM desert. If you have access to fresh mushrooms, by all means use them. They'll taste so much better.

A teaspoon of dry seaweed would enhance the seafood flavor of this soup.


This is what you need for 2 servings:

  • 1-2 lbs. fresh tomatoes
    or use a medium can of pureed tomatoes
  • 1/2 lb. frozen shrimp
  • 1 8-oz. can of straw mushrooms
