vermicelli tomato soup

Tomato soup with pasta is a favorite worldwide.
This is widely available as pre-packaged instant soup, but fresh tomatoes taste so much better.

Flavor-wise, it doesn't matter much what type of pasta you add.
Different pastas will create different textures, but as long as it is wheat pasta, with much same flavor.

INGREDIENTS

This is what you need for 4 servings:

3 large beefsteak tomatoes
OR: 1-2 lbs. roma tomatoes
vermicelli / fideo
S&P
Maggi bouillon

Directions

Pic2: tomatoes, halved
Pic3: add water
Pic4: boil

Core and halve the tomatoes.
Add water, bring to a boil.
Optional: peel the tomatoes as soon as the peels separate.
Boil for 10-20 minutes.
Puree with a stick blender.

Pic7: add vermicelli

Serve simple tomato sauce for comparison.
Add up to 1 tbsp. Maggi bouillon.
Add vermicelli.

Pic10: next-day

Bring to a boil and simmer for the recommended time. (usually about 10 minutes.)
I prefer it fully cooked, soft.
Serve immediately. Enjoy.
Optional: add hot sauce to taste.
The longer the soup sits, the thicker the pasta gets. (Pic10)
