bean sprout soup with mushrooms


This recipe requires very fresh bean sprouts. Fresh bean sprouts are crisp and break with a snap. Bean sprouts deteriorate and spoil very quickly. They taste unpleasant when that happens.

This is what you need for 4 servings:

  • 1 lb. bean sprouts, washed, cleaned
  • 4 large tomatoes
  • 1 lb. button mushrooms, sliced
  • olive oil
  • S&P


  • Wash and rinse the bean sprouts at least 3 times.
    Remove and discard any wilted or damaged sprouts.
  • Stew the mushrooms in some olive oil for 15 minutes.
  • Add the bean sprouts and chopped tomatoes.
  • Add water up to 4 qts. total volume.
  • Add S&P, seasoning to taste.
  • Bring to a slow boil over medium heat.
  • Reduce heat and simmer 30 minutes.
  • Serve and enjoy.
