egg drop Rice Soup


This 1-skillet meal soup is quick but satisfying, a meal worthy of any college campus.

This is what you need for 4 servings:

  • 1 6-oz. package rice and broccoli gratin
  • Optional:
    • ½ lb. small salad shrimp, thawed
  • 2 eggs
  • 5 cups water
  • S&P
  • your spices of choice


  • Bring 5 cups of water to a boil
    This is double of what is listed on the package.
  • Add rice, S&P, seasoning to taste,
  • optional
    • Add some curry powder.
  • Bring to a boil again and simmer over low heat for the time recommended on the package. 
  • Add the shrimp. Simmer 5 more minutes to warm them through.
  • Stir occasionally.
  • Lightly beat 2 eggs and stir them into the soup.
  • Serve and enjoy.


  • Serving suggestion:
    • Serve with crisply toasted French bread with garlic butter.
