Rice Soup with Shrimp


This is the soup version of the Paella With Vegetables recipe. I used chipotle pepper instead of saffron to get a different flavor. As always, you can make this from scratch by using the same ingredients with more water.


This is what you need for 3-4 servings:

  • 1 cup long grain rice
  • 1 lb. XL tail-on shrimp
  • 1 lb. vegetable mix of choice
  • 1 chipotle pepper in adobo sauce
  • S&P
