rabbit soup with lettuce

Rabbit soup has a mild flavor, lettuce not so much. The lettuce also colors the soup much darker. It is a very nice combination, away from the ordinary. One of my rare soup recipes with only one vegetable.

INGREDIENTS

This is what you need for # servings:

2 lbs. rabbit, parted
this is half of a 6 lbs rabbit
1 head of lettuce, shredded
S&P, spices

Directions

If desired, brown the pieces of rabbit in some hot oil.
You will probably not notice any difference with the overpowering lettuce flavor.
Transfer to a large stock pot.
Add 6 qts. of water.
Add shredded lettuce.
Bring to a boil. Reduce heat and simmer for 45-60 minutes.
Serve and enjoy.
