potato soup

Potato soups are made around the world. It starts with potatoes only, with maybe some fresh parsley added; (Pic1)  but the sky is the limit. Add whatever you want. As long as the potatoes remain the main ingredient, you can call it a potato soup.

Caldo de papas is one of the most popular soups in Mexico. It is very easy to make and there are many variations with additional ingredients. Marielos makes it with tomatoes. (Pic3+4)

I use potatoes in a variety of soups, but more often in a supportive role and as a potential thickener.

INGREDIENTS

This is what you need for 4 servings:

  • 2 lbs. potatoes parsley, minced
  • S&P
  • optional:
    • fruit (pears)
    • ham or bacon
    • leek
    • sausages
    • shrimp
    • tomatoes
    • etc.
