INGREDIENTS
This is what you need for 3-4 quarts = 6-8+ servings:
- 2 large sweet onions
- 2 medium carrots
- S&P
- beef stock

- Peel and chop the onions.
- Peel and slice the carrots.
- Brown the onions in olive oil over high heat.
- Add carrots.
- Add 3-4 quarts beef stock.

- Bring to a boil. Season to taste.
- Reduce heat, cover and simmer for 30-60 minutes.
- Adjust seasoning.
- Serve and enjoy.
Serving suggestion:
