Mushrooms are used in many recipes and it's always useful to have some on hand. This is not just mushroom soup. It is the essential ingredient for a multitude of recipes.

Plain mushroom base looks dirty-brown. Compared to the bright white of canned cream of mushroom, some might feel that doesn't look very appetizing. Adding cream will lighten the color.

INGREDIENTS

This is what you need for 4 servings:

  • 1 lb. button mushrooms, cleaned, sliced
  • 1 onion, chopped fine
  • 1 tbsp. each butter and olive oil
  • S&P
  • Optional:
    • 1 onion, chopped fine
    • 1 cup heavy cream
