lettuce & spinach soup


Lettuce soup has an amazingly strong flavor in soups. In this recipe it is combined with some other strong flavors. It usually takes an overnighter in the refrigerator before the Brussels sprouts become really noticeable.


This is what you need for 5 quarts / 10 servings:

  • 1 head of lettuce
  • 1 lb. of baby spinach
  •  10 Brussels sprouts
  • 1 large onion, whole
  • 1/4 green cabbage
  • S&P

In this recipe, we add more vegetables, but the lettuce is still the dominant ingredient.

  • 2 onions
  • 3 zucchinis: 1 yellow, 1 green, 1 grey
  • 2 big carrots
  • ΒΌ green cabbage
