lettuce soup with mushrooms and meatballs


Boiled lettuce—especially red varieties—makes a very dark broth and has a prominent flavor. The baby Portobello mushrooms make that even stronger. A very flavorful soup.


This is what you need for 4 servings:

  • 1 lb. spring lettuce mix
  • ½ lb. baby Portobello mushrooms
  • S&P
  • 1 lb. ground beef & pork mix
  • your preferred spices/condiments
