Duck soup with ...
Just like chicken, once you've made the basic duck stock, you can add whatever you want to get an endless variety of duck soup flavors. I like to load my soups with many different vegetables together. If you prefer only one or a few, that is what you should do.
Pic1: always make a good duck stock first
Pic2: leftovers from a roast make darker stock
- Add whatever vegetables in the quantity and combination you like.
- Simmer 10-20 minutes to get them crisp to well done, longer if you like mushy soup vegetables.
- If you don't boil the duck overly long, the meat may still be quite good to eat. (Pic8)
It is only after boiling for several hours that the meat loses all its flavor.
