Back to the basics:
stuffed cucumber soup with celery, potatoes

After almost 2 years making stuffed cucumber soup and experimenting with many different combinations, I have come full circle, back to the basics. I found that stuffed cucumbers go best with the simplest base soup, celery and potatoes only. Anything else tends to distract from the mild flavor, but that does not mean the other recipes are not good, on the contrary.

A. celery & potato soup

I often savor the base soup before I add the stuffed cucumbers or meatballs. Celery & potato soup has a delicious delicate flavor like no other soup. I like it.

INGREDIENTS

This is what you need for 4 quarts = 8+ servings:

  • 4 large cucumbers
  • 1 lb. beef & pork each.
  • 1-2 eggs
  • 1 head celery
  • 4 large potatoes
  • S&P

b. the meal

There is no obligation to serve this as a soup.
I like to serve the broth as a starter and the solids separately as a full meal.
