Vermicelli chicken soup


Chicken soup is good for the soul, especially in these difficult times of the Covid-19 pandemic.

This is the real thing, made with real bone-in chicken breast. I brought the soup to a boil very briefly, then switched off the stove and let it rest until cooled down again. That didn't quite fully cook the chicken breast, but it flavored the soup enough without giving up everything like happens with an older soup chicken.

I had fried some bacon yesterday. The leftover fat went in the soup for extra flavor. And of course, vermicelli (aka fideo) is considered mandatory to soothe the soul. Enjoy.

This is what you need for 4 quarts = 8+ servings:

  • 1 bone-in chicken breast
  • S&P
  • 1 sachet Knorr 'vegetable recipe mix'
