celery soup with potatoes, tomatillos


I made this soup as a vegetable stock starter for the Stuffed Cucumber Soup, but it can stand on its own feet. It is a very simple recipe with a delicious outcome. The tomatillos added a slightly sour flavor accent that I really liked.


This is what you need for 4 servings:

  • ½ celery head
  • 2 medium potatoes
  • 2 tomatillos
  • S&P
