Red Cabbage Soup

Red cabbage by itself has a rather intense flavor. The apples (or carrots) help to mellow that a bit.

I did not make this recently, but I simplified the original recipe somewhat. I don't think this needs many spices. See THIS INTERNET PAGE for the original recipe.

INGREDIENTS

  • ½ lb. red cabbage
    quartered, cored, shredded
  • 1-2 large apples,
    peeled, cored, chopped
  • 6 slices smoked bacon, chopped
  • 1 large onion, chopped
  • 1 large carrot, peeled, chopped
  • 1/4 cup cider vinegar or wine vinegar
  • 2 tbsp. brown sugar
  • olive oil
  • S&P, nutmeg, 2 bay leaves
  • optional:
    • juniper berries
    • whole cloves
    • orange rind
    • cinnamon stick
