bok choy soup with mixed vegetables


A simple recipe, but a filling meal soup with a nice mushroom flavor combining with the spicy overtone from bok choy.


This is what you need for 10 quarts / 20+ servings:

  • 1 lb. bok choy, stems and leaves cut coarsely
  • 8 oz. button mushrooms, sliced
  • 4 large carrots, sliced
  • 1 lb. quartered green cabbage
  • ½ lb. red cabbage, shredded
  • S&P, spices of choice to taste
  • optional:
    • 2-4 chicken legs
