INGREDIENTS
This is what you need for 4 servings:
- 4 eggs
- 2 cups shredded cheese
- 1 cup almond flour
- 2-4 tbsp. butter
- S&P
Chaffles (from cheese / waffles) are one of the keto world's most popular substitutes for breakfast waffles & pancakes. The basic recipe is eggs with shredded cheese baked in a waffle iron.
And then you can add whatever strikes your fancy, as long as it is 'keto-clean.'
People keep telling me that its OK to eat that many eggs in keto,
Maybe that is because I'm so recent into it, not yet 'fat-adapted' but my stomach doesn't seem to agree with them. I'm going to hold off a bit longer on 8+ eggs on a daily basis.

This first experience showed me that a lot depends on what kind of cheese you put in them.
This Colby Jack and Monterrey blend was clearly not the best choice for us, too sharp, but if you like that blend, it might be OK for you. A second attempt with mozzarella cheese turned out much better to our liking.
Very surprisingly, these looked better than any waffles I've ever tried to make on this waffle maker that tends to fluff very little. First time ever that I had evenly-cooked, nicely-brown fluffed waffles.

My second attempt was both better and worse. It didn't look so nice, the waffles remained pale and didn't rise like in the first attempt. That may or may not have been because I forgot to add the almond flour.
On the other hand, they tasted so much better.
Mozzarella is a milder cheese that doesn't have the sharpness of the first batch.
And adding the poblano peppers was a good idea. We both liked that.
