Brussels waffles

Brussels waffles are made with a yeast-leavened batter, which makes them lighter and crispier. They are rectangular with defined edges, and they have deeper pockets or holes than American pancakes.

The recipe on this page is from the Croquade recipe booklet. It uses self-rising flour instead of yeast.

INGREDIENTS

This is what you need for 8 servings:

  • 2 cups self-rising flour
  • 3 tbsp. vanilla sugar
    OR 3 tbsp. sugar + 3/4 tsp. vanilla extract
  • 1 cup milk, room temperature
  • 7 tbsp. butter, melted
  • 3 eggs, sepaerated, at room temp.
  • 1 pinch of salt
