tamarindo beef tongue

Tamarind is the bean-like fruit from the Central American tamarindo tree. It can be prepared from scratch, but the beans are quite pricey in the US and it's a chore to prepare it.

Tamarind is available as a puree concentrate, as an apple-dip paste and as an Indonesian instant-soup package. My favorite is the candy-apple paste. It keeps forever and is easy to measure to taste.

This one was cooked with a sachet of tamarindo soup base, not with the paste.
This powdered instant soup is very acidic, which helps to tenderize the meat.

After the beef tongue has been cooked, the tamarind flavor persists inside the meat, but you are also left with a delicious tamarindo beef soup. If you used the entire package, you might have to dilute it some to reduce acidity.

This is what you need for 3 quarts = 6 servings:

This was pretty much a tongue boiled 'au naturel' without any significant amount of vegetables. I served this with boiled white rice and Provencal sauce.

INGREDIENTS

This is what you need for 2 servings:

  •  1 lb. beef tongue, cooked, sliced
  • 1 cup white rice, boiled
  • 2 cups Provencal sauce.
