Potatoes should be boiled before being pan-fried.
Otherwise the center of the potatoes will still be raw by the time the outside starts charring.

- Heat olive oil in a frying pan.
- Add sliced / diced boiled potatoes.
- Wait long enough for the brown crust to start forming before stirring.
2019-10-24 — pan-fried potatoes with gravy

- Pan-fry potatoes until nicely brown.
- Add gravy.
I added water to the steak drippings.
- Simmer for a few minutes. The sauce will thicken with the potato flour.
- Serve and enjoy.
Spanish-fried potatoes (patatas bravas)

- Dice the potatoes fairly small, otherwise they won't fry evenly.
- Heat 3/4" olive oil in a frying pan.
- Fry the potatoes, stirring regularly.
- When evenly brown, dry the potatoes on paper towels.
- Serve and enjoy.
