boiled whole onions

Boiling whole onions makes them very soft and very sweet, apparently more so than when they are cooked chopped up. Since 2018, I started using whole onions for the soup, so I wouldn't have to go fishing for chopped onion when my dog wanted some soup. It turned out that the whole onions were a worthy dish in their own right.

INGREDIENTS

This is what you need for 2-4 servings:

  • 2 white onions, boiled
  • 2 cups cranberry sauce

b. sweet & sour balsamic onions

Possibly my earliest whole soup onions. Same type of boiled onions, different presentation. If you don't like balsamic vinegar, substitute with an apple cider or wine vinegar that you like better.

I had to do something with the onions that I cooked whole in yesterday's soup. I expect the result is very similar to 'Honey Roasted Cipollini Onions' other than that these are bigger onions. 

I also found a very similar recipe for roasted onions with honey and balsamic vinegar where the onions would remain a bit crisper.  

INGREDIENTS

This is what you need for 4 servings:

  • 4 medium white onions, boiled
  • raw honey
  • balsamic vinegar

optional:

  • chipotle powder
