This is another popular combination for carrots. Sometimes I cook the separately, sometimes together. These are two examples of where I cooked them together with the meat.

INGREDIENTS

This is what you need for 2 servings:

  • 1 lb. potatoes, peeled, quartered
  • 1 lb.  carrots, peeled, cut or sliced
  • 1 lb. meat of choice

A colorful vegetable stew. Make it vegetarian, or not.

INGREDIENTS

This is what you need for 8 servings:

  • 4 large carrots, sliced thin
  • 3-4 potatoes, peeled and cut
  • 2 large green peppers
  • 1/8 red cabbage,
  • 1/8 green cabbage, shredded
  • 1 cup of diced celery
  • 1/4 cup pickled pearl onions
  • S&P
  • spices of your choice

optional:

  • 1-2 cups diced ham
