omelet with asadero cheese

OK, I confess. These aren't real eggs, but colored egg whites from a box. They don't taste nearly as rich as real eggs, but it seems they do cut down on cholesterol. Not my favorite though, and Marielos won't touch them.

Asadero cheese is a fairly mild melting cheese from Mexico that is often used in quesadillas.
If you prefer other cheese, by all means do your thing.

Disadvantage: That box has to be used within 7 days after opening. Don't buy a quart box if you have to eat it all by yourself and don't want to eat colored egg whites twice a day for the week.

Advantage: They cook a very nice smooth omelet. After my 1st time shown below, my technique improved quite a bit and I was able to cook smooth crepe-like omelets.

INGREDIENTS

This is what you need for 2 servings:

  • 1 cup colored egg whites
  • S&P, seasoning of your choice
  • asadero cheese
