INGREDIENTS

This is what you need for 2 servings:

  • 2 eggs
  • vegetables, chopped small
    onions, potatoes, bell pepper
  • S&P

optional:

  • ham
  • bacon
  • hard-boiled eggs (refrying)
  • whatever strikes your fancy

  • 1 cup onion + bell pepper 50% mix,
    chopped small
  • 2 plum tomatoes, chopped small
  • up to 1 cup melting cheese of your choice, grated
  • S&P

Optional:

  • chopped bacon or ham
