oven-baked rainbow trout fillets

Most farm-raised rainbow trout has greyish-white flesh. These have the red flesh of wild trout because they have been fed the same diet that wild trout eats. These are very nice fillets, considerably larger than the whole trout I occasionally buy here in town.

INGREDIENTS

This is what you need for 2 servings:

  • 2 rainbow trout fillets, thawed
  • S&P
  • Old Bay spices
