INGREDIENTS
This is what you need for 6-8 servings:
- 1 lb. salad shrimp
- 1 lb. mixed seafood
- ½ raw onion, chopped fine
- 4 roma tomatoes, chopped, drained
- 15 limes, juiced
- S&P
- 1-2 jalapeño peppers
- cilantro, chopped
various dates
Ceviche de camarones = Mexican shrimp salad.
Ceviche is a very popular technique where the food is marinated/cold-cooked in lime juice. That is most often done with seafood, but it can also be done with beef ( = Carne Apache) or other meats.
Soak in lime juice at least 1 hr. for raw fish, 2 hrs. for raw shrimp a.o. seafood.

This is pretty much the standard recipe, except that I precooked the mixed seafood.
I now use that method—separate seafood and veggies—instead of mixing it all together from the start. The veggies look better if added only when the meat/seafood is ready. See Ceviche de Pescado.

This is my fruity version of a very popular Mexican dish. Feel free to adjust the ingredients to prepare it to your personal preference. The fruit was all my idea. :-)
This is still the old method, everything together.
