Breaded lake perch fillets are my latest selection from walleyedirect.com. They’re not my favorite, but Marielos likes them well enough. I prefer thicker fish for breading and deep-frying. When I eat fish, I prefer to eat fish, not mostly batter.
The recipe is simple enough. I Spanish-fried the fish in a small saucepan with 1” of oil instead of a deep-fryer. I didn't want to use a lot of oil. After frying fish the oil is imo no good for further use and needs to be thrown out.
