INGREDIENTS
This is what you need for 2 servings:
- 2-4 flounder fillets
- 1 egg
- flour, seasoning, breadcrumbs OR fish fry mix
- 1-2 cups sliced potatoes (or dehydrated)
- 1 ripe avocado
- 1 cup broccoli stems
- S&P
Flounder has smallish, thin fillets that will fall apart very easily when cooked.
Breading the fillets helps to keep them together.

It holds the flour / breadcrumbs quite well, but it tastes a bit like an omelet ...
The avocado was a bit past its prime, but still enjoyable.

These were store-bought breaded flounder fillets. The breading is a lot more even than I usually manage. The fillets are also a bit smaller than the ones from the fish market.
