INGREDIENTS
This is what you need for 6 servings:
- 6-12 slices ham

1 can green asparagus
OR cook fresh asparagus spears - 1 lb. lettuce / spinach or mix
- 2 cups Mornay sauce
- 1 cup grated melting cheese
- 1/2 cup breadcrumbs

White asparagus is like a white elephant in the New Mexico desert; extremely rare and by the time they get here, they're not in a very good condition anymore. I made this with canned white asparagus before I started recording my kitcheneering adventures and even those are difficult to find nowadays. I borrowed these internet pictures instead.
Don't forget to peel raw white asparagus. You also have to cook them first. And because asparagus is so thin, stack a few together in a single ham roll.
Use the same method as endive ham rolls.

This is practically the same as above, with green instead of white asparagus and some extra sautéed lettuce.

A variation on the above, served as a cold dish. This is a pretty popular item for more formal dinners. It looks good, tastes god and is quick and easy to make. Use mayo instead of béchamel or Mornay sauce.
