INGREDIENTS
This is what you need for each serving:
- lamb's roast, cooked
- 1-2 tbsp. green chile, fully cooked
- S&P, mayo, ....

Marielos is not a fan of lamb's meat. That means a roast will last me several days.
Good thing it lasts a long time in a cold fridge without spoiling. This one went for close to 2 weeks.

At least part of my lamb's roast ends up in a sandwich. They are a delicious quick snack in late afternoon. This one had a NM treat in a combination that I had not tried before. It turned put very well.
I used mild green chile. If you like things spicy, use a hotter variety, or add some nacho jalapeno slices.
